We’ve been training coffee professionals for many years. Our state-of-the-art Coffee Academy in Manly Vale educates hundreds of baristas every year in small, personalised classes led by instructors who are proven industry professionals with a wealth of knowledge, and just as importantly, a love of sharing the joy of the perfect coffee.

Barista Foundations

Learn the secrets of the perfect espresso. In this interactive class, we’ll demonstrate all the variables involved in producing outstanding espressos. This class is a prerequisite for the Barista Foundations Practical class.

Course Content:

  • Setting a recipe
  • Dialling in an e-grinder
  • Cleaning / maintenance during service
  • Black coffee menu
  • Milk quality and management
  • Cup sizes and espresso quantity
  • Milk coffee menu
  • Daily cleaning / maintenance

BARISTA FOUNDATIONS

Having completed the Barista Foundations Theory course, now you’ll learn the practical skills to bring your understanding to life, and make outstanding coffee, day in, day out.

  • Dial in an e-grinder to a recipe
  • Milk texturing
  • Milk splitting and pouring
  • Construct the menu
  • Cleaning during service and end of day

Duration: 2hrs

MILK SKILLS AND LATTE ART

In any milk-based coffee, the preparation and presentation of the milk is equally as important as the espresso, to both taste and aesthetics. This practical class complements our Barista Foundations classes, and our trainers will tailor their instruction to your skill level.

Course Content:

  • Milk texturing techniques
  • Beverage management / jug splitting
  • Pouring techniques
  • Basic to advanced latte art techniques

Duration: 2hrs

Barista Systems

Efficiency is just as critical to your cafe’s success as the quality of your coffee. In this highly practical class you’ll learn how to take the skills you acquired in our Foundations courses, and apply them in a busy cafe environment, all from professionals who’ve actually done it. In the process, you’ll also gain a much better understanding of your coffee equipment, how it functions and how it affects coffee quality.

  • Dialling in: machine and grinder
  • Station set up
  • Rules and responsibilities of Barista: station 1, 2 and 3
  • Systems: 1 & 2 person

ESPRESSO MASTERCLASS

In order to measure and manipulate flavour we first need to understand what it is, how we sense it, and what leads to its quality. This class will refine your already solid barista skills, transforming you from someone who merely makes coffee, into an artisan and enabling you to create a range of delectable flavours from high quality coffee beans.

  • Growing and processing techniques and their impact on quality
  • Green coffee selection and grading
  • Specialty coffee and micro-lots
  • Flavour development in roasting
  • Flavour modulations to become conscious of our senses (like a wine tasting for coffee)
  • Understanding recipe
  • 1 hour break
  • Acids in coffee modulation
  • Theory of espresso extraction
  • Flavour troubleshooting and manipulation
  • Dialling in a single origin coffee
