Grind fresh: From the moment coffee is ground it will be at its freshest and best for ten minutes maximum, it means that the best time to use the freshly ground coffee is immediately.

  • Try not to grind more coffee than you will use for immediate brewing. Once the beans are ground, the flavourful oils are exposed to the damaging air. Once these oils dissipate, so will the flavour of your coffee. It means that, once ground, coffee will begin to lose its flavour almost immediately.
  • Grind a little bit of fresh coffee and then discard it. This will hopefully get any old, stale coffee you could have not reached when cleaning the grinder out of the system.
  • Since coffee goes stale, if you do not use your grinder regularly, never leave your beans in the grinder overnight and only put about 60 minutes beans in the hopper.
  • The correct adjustment of the grinder is crucial to guarantee correct grinding and ensure the best possible extraction. Too coarse or too fine coffee will result in either watery espresso or extremely bitter and unpleasant strong coffee.
  • The key to evaluate the proper espresso grind is the extraction time. After the proper dose and tamp, 30ml of espresso should be extracted in 25 to 35 seconds. If the extraction occurs in less than 25 seconds, grind your coffee finer. If the extraction occurs in longer than 35 seconds, grind your coffee coarser.
